I like this sheet pan for my weekly meal prepping because of how easy it really is. It isn’t so much of a recipe as just an idea to remember when you’re thinking of easy meal prepping ideas. All I do is cube sweet potatoes, zucchini and dice a sweet onion.
I spread them out on a sheet pan and coat them in olive oil. I toss on garlic salt and pop them in the oven on 400 degrees. I check them at 20 minutes, stir them up and usually let them cook for another 10 minutes. They should look like the picture below when they are finished.

Literally it is that simple. I have also added bell peppers and broccoli in the past which are really tasty too! I usually make these on Sundays and eat them throughout the week with my dinners. It is nice because it is one less thing I have to cook for dinner. I hope you try out this meal prep idea and find it helpful!
